The temperatures seem to be plummeting this week so I’ve been reaching for extra layers and lots of hot chocolate! Whether I make it at home or order it in a café, warm milk infused with cocoa always feels like a treat! I wanted to create some cupcakes to reflect one of my favourite hot drinks so I made these light and fluffy chocolate sponges, topped with a creamy chocolate ganache and mini marshmallows, finished off with a dusting of cocoa powder.
Although they taste so yummy, the ganache frosting turned out to be a lot runnier that I would have liked. My excuse was that I hadn’t made this stuff in ages but really, I think if I’d just let it cool down a bit more, it would have been fine! It’s just something I’ll have to remember for the future. After all, practice makes perfect — and I guess that could be the perfect excuse to make these again very soon!
