Sweet and Salty Sundae


I’m slightly obsessed with combining sweet and salty flavours. This sundae is a super easy dessert that’s great to serve after dinner or for an indulgent snack! It can be put together in minutes and although it leans more towards the sweet side, there’s also a yummy salty touch to it.


Leave out a tub of good quality vanilla ice-cream to soften slightly.

Put 4 tablespoons of caramel, 2 tablespoons of peanut butter and a splash of milk in a pan over a medium heat. As it starts to melt, stir constantly so it’s thoroughly combined. Depending on how much sauce you want to use per portion, this can serve 2-4 people.

Break up 6-8 biscuits in to rough crumbs. I love using Lotus biscuits here for their warm cinnamon flavour.

In bowls or glasses; start layering the biscuit crumbs, sauce and ice-cream. Throw in any extras here that you might like — think mini marshmallows, chopped nuts or chocolate chips! So simple but so delicious!
