It’s always fun to give classic recipes a seasonal twist. With a kitchen full of ripe fruit, I decided to incorporate fresh strawberries in to these simple sugared scones. It was literally only a matter of cutting the fruit up in to little chunks and briefly folding them in to the mixture before they go in to bake. You’ll love the result: light and fluffy scones with bursts of juicy strawberry pieces.
These are delicious served warm from the oven or even for breakfast the next day with lots of butter or — better still — some homemade strawberry compote (surely that would count towards our five a day?!).
