Last week, I picked up a copy of Lorraine Pascale’s A Lighter Way to Bake and I’ve been leafing through it ever since. It includes a seriously impressive range of delicious recipes which are healthy versions of all our favourite treats. From classic cakes to tasty puddings, savoury snacks to sophisticated dishes; there really is something to suit everyone’s tastes.
At the weekend, I decided to try out Lorraine’s lighter banana bread. Unlike traditional banana bread, this recipes uses very little butter and no eggs. Instead; it includes alternative ingredients like oats, olive oil and maple syrup. The result in a beautiful loaf that’s moist, dense and packed with flavour. I also tossed in some plain chocolate chips which made it a little less virtuous (but so, so scrummy!).
