I made a proper start on my Christmas shopping this weekend and along the way, I picked up a shiny new cupcake tin for myself. I just had to give it a test run (you know, in case it didn’t work or something…) and so I whipped up some luscious caramel mocha cupcakes.
I mixed hot chocolate and coffee and added approximately half a cup to a basic cupcake mix. For the caramel frosting, I adapted this recipe. Although this turned out quite soft and a bit messy to eat; it was totally worth it. Sweet, fudge-like and deliciously creamy; it tastes so good spread thickly on top of the mocha-flavoured cake. Finished off with a dusting of cocoa powder, these cupcakes were quickly ready to be devoured with hot drinks on the side.
