Ever since I went back to work full-time, I’ve been on the lookout for quick and easy dinner ideas. One of my favourite finds is this recipe for chicken, pesto and spinach puff pastry open tart. It requires little effort to put together and it’s filling, tasty and something different. Chicken and pesto has become a classic combination, and the spinach and cherry tomatoes on top are a great way to get in some veg. It’s best to eat this on the day you make it as it doesn’t keep so well but it’s so delicious that leftovers shouldn’t be a problem anyway!
