Cinco de Mayo

This is one of the reasons I love blogging. A few years ago, I’d never even heard of Cinco de Mayo. Then I started reading more and more blogs. I couldn’t help noticing how, every May, people were going crazy for all things Mexican. I love Mexican food so this year, I didn’t hesitate in joining in the fun!  I made fajitas for the whole family. The soft white tortillas filled with spicy chicken, mixed peppers and salsa  were a huge hit. I also served them up with fresh exotic juice and a handful of crispy tortilla chips on the side for good measure. Now I’m not sure if this was truly authentic fare but it all tasted so, so good. We definitely won’t be waiting ’til next year to have this again.

  1. I love mexican food and this is one of my favourite dishes, quick and easy to cook – though as a vegetarian, I swap mushrooms or paneer for the chicken
