Lunch today was a watermelon and feta cheese salad accompanied by homemade sweet potato fries sprinkled with sea salt. You just can’t beat a sweet and salty combination. The salad was light and refreshing and the fries tasted as good as any you’d buy in a fast food outlet (but obviously way healthier). I’ll definitely be making this over and over again throughout the summer. It’s a fun, flavoursome and satisfying meal. Total bonus that it’s pretty good for you too!
Make the salad to your own liking. I used a large slice of watermelon, a few small cubes of feta cheese and a couple of large handfuls of salad leaves. Dice up the watermelon, crumble over the feta and scatter the lot throughout the leaves. Adjust the measurements to suit your own taste.
For the fries, peel and slice up a large sweet potato in to long thin strips. Spread the strips evenly on to a lined baking tray, drizzle on a tablespoon of olive oil and season with a pinch or two of sea salt. Bake in the oven at 180°Celsius for thirty minutes. Serve immediately. Yum!
