I recently came across this recipe by Catherine Fulvio and I knew straightaway that I’d have to try it out. When I’m drinking (which really isn’t that often ;-)), I usually have vodka but I had never cooked with the stuff up until now. I’ll admit that I was a bit apprehensive putting this together but I was really pleased with the result.
It’s so deliciously rich and indulgent. The red chilli and splash of vodka gives it a really great kick. You could easily get 4-5 portions out of this recipe. You wouldn’t want to eat more than a medium sized bowl because it is quite heavy. However, because it’s so substantial, it also makes for a fun and alternative meat-free meal that will leave you full and satisfied. If you want to kick off your weekend in style, this is a gorgeous dish to try.
