It’s Mother’s Day here in Ireland today so I just had to whip up an extra indulgent dessert. As it’s pretty cold out there as well, warm chocolate lava cakes seemed to fit the bill perfectly. I found this recipe in my copy of Rachel Allen’s cookbook Bake but it’s also available online here.
Be sure not to overfill the ramekins or to overcook them so that you can get that all-important gorgeously gooey centre. These are best served immediately out of the oven with a light dusting of cocoa powder and a scoop of good-quality vanilla ice cream.
