A few years ago, I spent a pretty amazing summer in Belgium. I stayed with a family in the capital city of Brussels and got to spend several weeks meeting new people and exploring their beautiful neighbourhood. It was such a brilliant experience and I have so many fond memories of my time there.
As you do in a different country, I tried some new and delicious food. One evening during my stay, the mother of the family made a cherry clafoutis. I had never even heard of this traditional French dessert before then but I was immediately intrigued by its slightly unusual look and incredibly delicious taste. Today I made my own cherry clafoutis using this recipe. It’s perfect on its own but especially delicious when served warm with a scoop of vanilla ice-cream.
