As it’s a cold and wet Sunday, and also because I’m still a little under the weather, I wanted to make something quick and comforting. I think most of us will agree that it doesn’t get much better than a batch of fresh homemade cookies. I hadn’t baked these little treats in a while and I was too tired to trawl through recipes so I just kind of made this up as I went along(!).
They turned out to really cakey cookies and surprisingly good. At the last minute, I decided to add peppermint and mocha flavours, which worked really well. I ate three of them with a tall glass of milk and I think I’m feeling better already 😉
8 oz self-raising flour
4 oz butter
4 oz sugar
1 tbsp of instant coffee
1 tbsp of cocoa powder
1 tsp peppermint extract
Handful of chocolate chips (optional)
Splash of milk (optional)
Beat butter, sugar and egg together until soft and fluffy. Stir in flour until well combined. Dissolve the coffee and hot chocolate in one tablespoon of hot water and add to the mix, along with the peppermint extract. Throw in a handful of chocolate chips if you like and if the mix seems dry or if you like a moister cookie, add in a splash of milk. Spoon on to a lined tray and bake in the oven at 180°c for 15 minutes if you like them soft or 18 minutes if you prefer a crisper cookie.
