If you’re still sticking to your resolutions and eating healthy; just remember that Sunday is a day of rest. It’s practically a sin not to take a little break (at least that’s what I’m telling myself ;-)). This is my incredibly indulgent Banoffee pie.
Combine 350g crushed chocolate digestives and 6 ounces of melted butter. Scoop the mixture into a pie dish and press down so it evenly covers the base and sides. Pop in the refrigerator for about ten minutes.
When it’s set; top the biscuit base with 300g of tinned caramel. Whip 200ml of double cream. Set aside about one third of the cream and fold 2 thinly sliced bananas in to the rest. Spoon the banana cream over the caramel. Finish off with the remaining plain cream and a couple of handfuls of chocolate chips. Yum!
