As soon as I saw fresh cranberries in-store this week, I snapped up a large bag without hesitation. I hadn’t a clue what I was going to do with them but I just couldn’t resist! When I got home, I trawled the internet for ideas and found this recipe for orange and cranberry spiced muffins.
Not only are these fun and festive; they also couldn’t be easier to make. It’s literally a matter of chucking all the ingredients in to one bowl, giving it a good stir and popping it in the oven. Within half an hour, you’ll have beautiful fresh muffins on your table. The cranberries provide a lovely sour kick and since we all know cranberries are packed with antioxidants and the like; surely that means it’s totally acceptable to have these for breakfast?
