I’ve been waking up the past few mornings to see everything outside coated in thin layers of frost. I know it can be dangerous but it also looks so beautiful! Today I made a wintery version of Rocky Road. To mimic the frosty streets outside, I created a topping of white chocolate and sugar crystals (usually found in the baking aisle in supermarkets). I always love a good twist on a classic and this is just that. It’s so quick and easy to prepare, and it makes the perfect accompaniment to a hot drink on a cold winter’s day.
Melt 125g butter, 2 tbsp golden syrup and 300g chocolate over a low heat.
Pop 250g of crushed plain biscuits (I use a mix of digestives and rich tea) and 150g mini marshmallows in to a large bowl; add the melted mixture and stir well.
Pour in to a lined tin, allow it to cool and then leave to set in the fridge.
Melt 200g white chocolate in a bowl over simmering water until it’s smooth and runny. Pour this over the set cake, sprinkle on a handful or two of sugar crystals and leave it back in the fridge.
Once it’s set; cut into squares and enjoy!
