Today, I wanted to embrace the last days of summer with a fresh fruity dessert. Here at home, we have been consuming tons of fresh berries over the past few weeks so I decided to opt for something different. Almost immediately I thought of the classic combination of peaches and cream and instantly knew I had to have it.
I baked two simple sponge cakes, sandwiched them together with locally made raspberry jam and topped it all off with whipped double cream and plenty of succulent peach slices. It was exactly what you’d want for the end of August. Each bite was light, sweet and refreshing – a real taste of summer.
