Grilled chicken skewers are the perfect choice if you’re in the mood for simple summer food. They’re so easy to put together and they taste great! Plus since they only require a few simple ingredients and they’re cooked under the grill, they could even be considered a healthy option. What’s not to like about that?
First of all, chop up some good quality medium-sized chicken breasts. In a bowl, mix together the raw diced chicken with soy sauce and oil – use two tablespoons of soy sauce and one tablespoon of oil per chicken breast. Cover the bowl with some cling film and leave the mix to marinate.
This will be ready after thirty minutes and then you can start assembling the skewers. Remember to thoroughly rinse wooden skewers before use and leave them damp as they might otherwise catch fire whilst cooking! I used tinned pineapple chunks and fresh red peppers to accompany the chicken on each skewer. The contrast between marinated meat, sweet fruit and crisp veg is so good!
Pop the skewers under the grill on a medium heat for 12-15 minutes. Turn the skewers halfway through to ensure they cook evenly. When it’s done, the chicken will have a lovely brown glaze because of the marinade; just make sure that the juices run clear and that the meat is white if you cut it open. Serve immediately with your choice of a side dish.
